Happy Thursday!

I’m looking forward to some nice weather for a change. Double-digit negative temps get old after….about five seconds.

I was in such a savory and green filled mood today.

I developed a brief love affair with Rocket in Australia. Only to discover they call it Arugula back here in the U S of A

Not as exotic as I thought, huh?

Well it was still hard to track down at any grocery store!

Rocket Salad with Sunflower Market Chipotle Salsa, Cherry Tomatoes, Feta Cheese, and a spritz or two of Balsamic Vinegar
I also had a nosh on this:Rye Wasa Cracker topped with Tofurkey, spinach, and stone ground mustard

I was feeling creative bored, so I decided to whip up a bunch of variations of the Vegan Frosting Recipe.

(read: I had two containers of tofu that were about to go bad if I did not use them.)Three variations in total. I kept the recipe the same. The only part I altered was subbing out any added sweetener and the cinnamon for other variations.
Carob Version: made with carob & chocolate amazing grass .

*My Favorite*

It has a hint of coffee flavor to it even though I didn’t add any coffee!Maple Nutmeg Cinnamon Version: Added pure maple syrup, nutmeg, and cinnamon.Green Monster Version: Added Spinach, Agave and Vanilla Chai Amazing Meal (which gave it a berryish flavor)

Taste the Rainbow? Ummm…

How about Taste the Earth?

I could paint a very zen room with my earth tone collection of vegan frosting 😉

Once I figure out a way to consume all of this frosting (Don’t worry I am enlisting in the help of willing friends)

I have ambitions of creating a peanut butter variation. mmmmm

Well basically that just chickens who were fed a diet with a lot of flax in it

Jamaican Me Vegan

When I moved into my apartment in Denver, I had a lot of extra room in one of my suitcases.

So, my Mom decided it was the perfect opportunity to get rid of all of my “weird foods” in her pantry and stock my shelves in Denver.

I’ve been searching for different recipes to use a few odd ingredients, but one thing I cannot get enough of is Coconut Flour

I have been adding it to everything lately and I’m sad to see it almost empty. Especially when I have such high aspirations for it.

I think I’ll just have to invest in another bag so I can continue with delectables like this:

Coconut Cream Topped Oat Bran:Mixed Berries, Chia, Agave, and Amazing Meal in Vanilla Chai (which is what gave it the slight green tinge) went into the Oat Bran.
I can’t believe coconut flour and almond milk are the only things in the coconut creme. Pure Genius!For Dinner I was craving something spicy. And not the usual ‘dump-a-bunch-of-sriracha-on-top’ spicy

I wanted some Island Action. I didn’t have any Jerk Seasoning on hand so I decided to improvise and try to mimic the flavor myself!
One of my more successful creations to date. Just the type of heat I was looking for!Plus I added some Sunflower Market Chipotle Salsa on top. This stuff is addictive. 🙂Soo good on such a brutally cold day. I needed to keep the blood pumping to my heart and spicy food is enough to make ya sweat!

Jamaican Jerk Chik’n

  • Spinach
  • Onion
  • Shroomies
  • Quorn Faux Chick’n (or other brand of faux chicken, or real chicken for the non vegos out there)
  • 1 T Rosemary
  • 3 T Thyme
  • 1 T Savory Blend
  • 2 T Paprika
  • S & P
  • A few generous squirts of Sriracha
  • 1 T soy sauce
  • Salsa
  1. And add mushrooms, onion, spinach, and faux chicken to an oiled pan over medium heat
  2. Once things start to heat up add all other ingredients except for salsa
  3. When ready, plate and top with salsa (I used a chipotle salsa for an added kick)

I’m going to spend the next 24 hours enjoying the snow day.

Yes, there’s only an inch of snow of the ground, but DU cancelled school wayy early due to extreme windchill. I’ll take it!

An Ode to Sunflower Market

Oh my good golly gosh was our refrigerator a disaster site this week.

 

*This was a particularly bad day as all four of us went grocery shopping on the same day.

Mile High Tofu. Yes that is all tofu with some tempeh on top, just to keep ya guessingI absolutely love how one of my flatmates, Natasha, and I are so in sync.

We get doubles of EVERYTHING. I don’t think we realized the hilarity of this situation till we stocked the fridge.

Note: the FOUR, yes FOUR packages of Tofurkey, guiltypleasure Laughing Cow Cheese, and two identical containers of Sunflower Market’s fresh Chipotle Salsa.

I was always a Whole Foods, Trader Joes and farmers market enthusiast and loyalist.

But I have found a new love, and am engulfed in my infatuation.

Sunflower Market!

Headquartered in Boulder, CO Sunflower Market sells many organic, local, the-whole-nine-yards, products. And everything is so inexpensive.

 

What really sold me is their house brand bread. So much variety to choose from, all whole and natural ingredients and a short ingredient list at that.

Apple Cinnamon Streusal, Hawaiian, Cinnamon Raisin Walnut?

I settled on Jalapeno Cheddar.

It. Rocked. My. World.

So flavorful, so fluffy. nom nom nom good on its own or on a toastie.

This is one of my favorite food photos to date. Look at the little spheres of yolk! (Is this odd how excited I am about a molecule?)

F.Y.I: That is not mold, it is a fresh jalapeno.

I think yolk breaking is my favorite part of egg-in-a-hole.That and this little guy!

Hmm….the cult favorites. The low prices….

…come to think of it Sunflower Market is Colorado’s answer to Trader Joes.
